It's been a while!
Wow! Life is so crazy!... I've learned a lot in these last couple of months that have made my heart and soul struggle. But through everything i've had to come to the realization that life must go on. That I must depend on those I love even if I don't want the help I need still need It. That everyday I look and the mirror and don't feel a change but still have the faith to keep going. To know that someday there will be change and that's the difference between accomplishing change and failing. I've also come to the realization that I have to take care of my body if I want to feel better. What you put into your body and how you take care of it influences everything you're feeling. Feed yourself with wholesome and pure foods that your body is ment to eat and your mood will change damatically. I think we all can have a little more faith and put a little more good into our bodies to help us all feel a little better!

Christmas and Ringing in the new year!!
This year has been full of ups and downs. Regardless of good or bad I truly realize how blessed my life Is. I have nothing to complain about. I have a roof over my head, clothes on my back and food In my belly. I have a wonderful husband and amazing family who I know love me. Without the downs I wouldn't realize how amazing the ups are. I'm grateful I was taught that Christmas Isn't about how many presents are under the tree. It's about a little baby In a humble stable surrounded by his earthly parents who loved him. What humble circumstances It was; Mary giving birth to the son of god In a stable. - Now we think we have It bad? Remember to serve those who are In need. And If you are the one in need of the serving make sure to be humble enough to receive it.-- On that note we are also ringing in the new year In hopes of a new beginning and new goals. Goals are great to have and help me feel a sense of achievement! Some of my goals this year:
1. Run the Half marathon (SLC) with my dad mom and sister.
2. Run swim and bike the (spring and fall) Mini triathlons with my dad
3. Go camping at least 5 times this summer
4. Get a 4.0 for my next year of school
5. Sell my pottery at a fair for the first time
6. Enter an art show somewhere in the country
7. Call my Family in Hawaii once a month
8. Get a routine of physical activity that I can make a lifestyle
9. Compete In a relay triathlon with my sister and dad in Hawaii.
Those are just some of my goals. But as I write them down I feel more committed to doing them. I hope to hear some of your goals for this coming year!

Feet don't fail me now!
Wow!!
Tomorrow is the day of the mini triathlon that my dad and I will compete in. We aren't putting ourselves on a time limit we just want to complete it. I guess that's really what we all need to do with our health goals. We can't put ourselves on a time limit of when and how to do things we just have to do them and prove to ourselves that we can. Don't put SO much pressure on yourself that If you fail one time that all is lost. Because guess what?! Only you can limit yourself only you can tell yourself you can't! So If you want to run a marathon or If you want to change your eating habits; do it today and expect to fail because failing is the best way to learn!-- Again so excited to do the triathlon and I will update on how It went!

It's a hard road!
Man this whole triathlon thing is kicking my butt! Literally ha ha my but is sore as heck from the biking. I suck at biking but I'm doing all I can to build up by stamina. I had fun the other day with by parents when we went swimming; my dad is good at biking and I'm good at swimming and we both know how to run. So me biking and him swimming is quite entertaining for the both of us! All I can say is when you commit yourself you have to more than just commit physically you have to mentally. You have to tell yourself every time you don't want to bike that extra mile or swim that extra lap that you have to even If you feel like your legs are going to fall off! Tell yourself I can do this, I am strong. You are the only one who has the influence to tell yourself that you can't do something! So you and myself included need to start telling ourselves that we can!!

YUMMY!!
Baked Southwestern Egg Rolls
Ingredients:
2 cups frozen corn, thawed
1 (15 oz.) can black beans, rinsed and drained
1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
2 cups shredded Mexican cheese blend
1 (4 oz.) can diced green chiles, drained
4 green onions, chopped
1 tsp. ground cumin
½ tsp. chili powder
1 tsp. salt
½ tsp. pepper
¼ tsp. cayenne pepper
1 package egg roll wrappers (about 24 total)
Directions:
In a large bowl, combine everything but the egg roll wrappers. Mix well to blend. Lay an egg roll wrapper out on a work surface so that one of the corners is pointing toward you and place ¼ cup of the filling in the center. Fold the tip closest to you up over the filling, roll a bit, then take the points pointing outward and fold them in toward the center. Continue rolling into an egg roll shape until a small part of the remaining point is still free. Dip a finger in water or beaten egg and lightly brush on the edges of the free corner. Finish rolling and press to seal closed. Repeat with the remaining wrappers and filling.
Preheat the oven to 425˚ F. Lightly oil a baking sheet with cooking spray. Place the sealed egg rolls on the baking sheet seam side down and spray the tops of the egg rolls with cooking spray. Bake for about 15 minutes, or until lightly brown, turning halfway through baking. Serve warm with salsa.

So here's what i decided!!
So as you can see I haven't posted in a long while!! So here's the game plan, I will post once a week and it will be something related to health. It may be some sort of motivation or simply just a wonderful healthy recipe I've come upon!-- Something new that I'm super excited about is my dad and I have decided to do a "mini" marathon. It's going to be so life changing to surpase what I believe my body is limited to! And I'm SO proud of my dad. Fifty years old and training for a marathon holy cow! It just goes to show that only you can tell youself you can't do something. I understand some people have physical limits but if you show yourself that you can do the thing you think you cannot you may just surprise yourself!

Oh, the places you'll go!
Today I gain inspiration from Dr. Suess as I do many times. As you set your new goals for the upcoming year reflect on the things you've accomplished. No! Don't think of your failures or you will feel overwhelmed. Truely relect on all the good and happy things that have happened. Then set a goal for yourself that stretches out of your comfort zone. For the last month or so I have struggled with eating healthy and exercizing regularly which normally comes with the holidays. But I'm not going to reflect on that I am going to think of what I'm going to do to get back into the routine and getting back on track. And all the other accomplishment I've made and how I can push those a step further.
" You won't lag behind, because you'll have the speed. You'll pass the whole gang and you'll soon take the lead. Wherever you fly, you'll be the best of best. Wherever you go, you'll top all the rest. Except when you don't. Becasue sometimes, you won't. I'm sorry to say so but, sadly, it's true that bang-ups and hang-ups can happen to you." -Dr.Suess-
When you go out of your comfort zone at times you are going to "pass the whole gang" and take the lead. You'll have so much umph in you that you will top all the rest. But don't be discouraged by all the Bang-ups and Hang-ups. Remember how happy your past achievements have made you happy and have helped make you the best you can be. " and you will succeed? Yes! You will indeed! (98 and 3/4 guaranteed)...Today is your day! Your Mountain is waiting! So....get on your way!" -Dr Suess- Start making your goals and write them down. A wise person once told me "If you don't write it down, it's nothing but a dream." I know I'm going to fail some days and I know I will feel defeated but I know tommorrow is a new day.
I encourage all of you again to write it down! Just as I encourage it must do and I will tell you what my goals are.
1. Eat at least a fruit and a veggie a day
2. Run a half a marathon with my dad
3. Exercise at least 4 times a week
4. Go out to eat only 3 times a month
One more suggestion make sure you make realistic goals but also ones that will stretch you. I wish you all good luck and happy goal making!! Make sure to post your goals and we will talk about them and encourge and celebrate throughout the year!!
